Helena is our most unadorned product: a double fermented clear koji spirit. Made from barley koji, pilsner malt, and Belgian Saison yeast, this product blends Eastern and Western fermentation methods to create a smooth base spirit with subtle nutty aromas and a delicate sweet barley character. Koji provides a signature flavor profile that yields a sweet, umami, and floral note.
After his explorations with fermentation as the head of research and development at Noma, Lars Williams knew that the exciting flavor qualities present in koji that are also found in fermented food and drinks such as miso, shochu, and sake could enhance an entirely new kind of flavor experience. Helena is Empirical Spirits most unadorned product that transports the purest expression of fermentation into a unique drinking experience. Koji, pilsner malt, and Belgian Saison yeast come together through a double fermentation process for results that combine a base flavor of sweet, floral notes from koji nuttiness and toasted bread notes from barley that give way to a bright, crisp umami finish.
